Southern Style Salmon Patties





Last night I made salmon patties, which is always a favorite at my house. It's cheap, easy to make, and salmon is rich in vitamin E. This recipe will make 4 large patties - perfect for a light supper for two. We like to have scalloped potatoes on the side, but baked potatoes with sour cream is good with them too. Round out the meal with a cool, crisp salad, green beans, or peas.


Simply take:


1 can pink salmon


2 eggs


1/2 onion, minced


seasoned bread crumbs


1. Drain salmon and use fork to flake into small pieces


2. Mix in minced onion, eggs and bread crumbs together. I don't measure how much bread crumbs to put in - I just mix in enough until it's dry enough to make into a ball, without sticking to my hands.


3. Turn burner on medium heat, and spray skillet with Pam


4. Brown patties to a nice golden color - about 5 - 7 minutes each side
A friend asked if this would be good with lemon and dill....YES! A sprinkle of lemon pepper or a couple of drops of lemon juice and a few sprigs of dill would be excellent on these!

Janelle, did you know that's a variation of the salmon pattie recipe from The Diet Workshop? My Mom passed it on to me long, long ago. When I made it for the first time, it quickly became one of hubby's favorite! I was shocked! It IS a really healthy dinner, especially if you just add lots of vegetables as a side dish, but like you, we usually have a potato!

My recipe adds 1 Tblsp of Lemon Juice, 2 Tblsp of Parsley, and 1/4 tsp. of dried mustard.

Yummy!
